âWe were lucky, very lucky,â said Ed Sammon, resident and owner-operator of Mentor, who, no, is not from the Bay Area.
“I’m not saying we haven’t had our challenges, because we have,” he added. âIt’s just that we were on the safe side of the cards that were given to us. I know a lot of great places and people who haven’t been there.

âI am proud that this restaurant has been at the forefront in this regard,â he said. “What, in my opinion, separates us from all the others is our variety of options and the level at which a customer can tailor their dish.”
Sammon, who is also a managing member of Froyo Twist Soft Serve and Bubble Tea, two suites located in the same plaza, noted that the San Francisco Stir Fry concept had been in his head since 2012, but the start-up process took about nine months after the project is launched.
To this day, Sammon believes his restaurant will continue to evolve in an industry that remains fast-paced and ever-expanding, despite the current health crisis, amidst which delivery via third parties – Grubhub, Uber Eats, DoorDash – a sustained activity. , options that are not going anywhere, whatever.
âOver time we get a bit better in the different processes, smoothing out small wrinkles and improving some nuances,â he said. âFor example, we added more veg, added sauces, subtracted some sauces, and added more protein options. We’ve also added double vegetable bowls so customers can get a full sized stir-fry.
âGluten-free, vegetarian and vegan options are also increasingly in demand,â added Sammon. âEgg rolls and spring rolls have all been popular recent additions to our menu.
